Here are the ingredients you will need:
- Lean Ground Chicken Breast
- 2-4 Stalks Celery, Chopped
- 1 Egg
- 1 Cup Bread Crumbs (or more, depending on your preference)
- 1Tablespoon Onion Powder
- 1Teaspoon Ground Pepper
- 1Tablespoon Garlic Salt1 bottle Frank’s Red Hot
In a bowl, combine the ground chicken, chopped celery, the egg, the bread crumbs (you may need a little more but do like me and keep adding and eyeballing it until it’s the right consistency for you), one tablespoon onion powder, one teaspoon black pepper and one tablespoon garlic salt. Use your hands to mix it all together and then form little balls that are slightly bigger then golf balls.
Ok, I’m not going to lie to you all…I thought I could skip this next step and get away with it. So I put the chicken balls directly into the crockpot and let them cook in there. They weren’t bad but I recommend doing this first: place them on a baking sheet and pop them in the oven for about 10 minutes at 400 degrees just to brown them up a bit.
After you do that step, then turn the crock pot on high and place half the bottle of Frank’s Red Hot in the bottom of the crock pot. Add the chicken meatballs and then pour the rest of the Frank’s Red Hot on top. Let them cook for around three hours on high and then turn it to warm.
I really like the flavor of these! They have a great kick and the celery really adds to it with that light crunch. I serve them with blue cheese or ranch dressing on the side. Next time I make them, I may even add a little blue cheese crumbles directly into the meatballs. Give them a try and let me know how your party guests like them!
