Main Ingredients:

Can of Creamed Corn
Can of Black Beans
Can of garbanzo beans  (you can also use kidney or pinto beans but this is all we had)
Can of diced chili ready tomatoes
Tomato Sauce (about 1/4 jar, I eyed it)
1 Green pepper
1 Red Pepper
1 Orange Pepper
3 Chicken Breasts
½ a Onion
and a few splashes of low sodium Chicken broth

 

photo-52Seasonings: (I eye everything so add a few dashes of this or that until its flavored to your liking!)

Red Pepper Flakes
Sea Salt
Cumin Powder
Chili Powder
Ground Black Pepper
Cilantro
Taco Seasoning or Taco Sauce
Hot Sauce optional

I put all the main ingredients in the Crockpot and let the chicken breasts stay on top for 5 hours on low.  Then I shredded the chicken and put it on high for an hour and then let it all simmer for another hour. Next, I made Uncle Ben’s Ready Rice in the Brown Rice flavor and put that in the bowl before topping it with the chili. 

I don’t like to put the rice in there because it gets too mushy. You could also do the Spanish ready rice or no rice at all. Optional toppings could be fat free cheese or fat free sour cream and fresh cilantro.  Enjoy!
