This is seriously the easiest pasta salad to make for Memorial Day or any summer cookout! We usually have most of these ingredients in our pantry so I love whipping this up! It’s the perfect side dish to bring over to a friends for a barbecue or to make for your family to munch on all week!
Ingredients:
1 package tortellini
1 cup balsamic dressing
1 cup chopped spinach
2 cups chopped salami & pepperoni
3/4 cup chopped black olives
1/2 cup chopped sun dried tomatoes
1 cup mozzarella pearls
1/4 cup Parmesan cheese
How to Make:
1. Cook tortellini pasta according to directions.
2. Add cooled pasta to a bowl and cover with balsamic dressing.
3. Chop all ingredients and add to a bowl with pasta.
4. Refrigerate for 4 hours before serving.
I like to leave my pasta salad in the fridge overnight before serving, I think it gives it a deeper flavor! You can also add more veggies to this if your family likes onions or peppers, and you can add some fresh basil as well to spice it up! It would go well paired with my caprese chicken recipe or even some grilled chicken or as a side to any barbecue dish!
