No Groceries, No Problem

Usually, my fantastic parents hit up the grocery store for Kyle and me on Sunday to get us a few groceries we will need for the week since we travel so much. However, Mom and Pops went to the mountains last weekend and we were down to the bare bones in the kitchen. After getting in the door from Vegas around 3:00 am and finally falling asleep at 4:00 am, we woke up at lunch time the next day. As we made our way to the kitchen, Kyle asked, ‘What’s for lunch’? Very good question, Kyle, I thought. We were going to eat cereal, like they do on “The Walking Dead”, sans milk (because there was no milk to be found), but Kyle apparently wanted something more substantial. After perusing the pantry, it wasn’t a pretty sight: a can of fat-free cream of mushroom soup, diced tomatoes in a can, a bag of M&M’s…hmmm. Luckily, my creative wheels started turning and, I must say, this really quick, super easy meal turned out pretty awesome! So the next time you only have a few minutes and not a lot to work with in your pantry, give this very healthy and tasty recipe a try!

First, I defrosted two frozen chicken breasts, cut them into chunks and tossed them in a pan with a little olive oil, garlic salt, a little bit of red pepper flakes, onion powder, and pepper. Once they were lightly browned, I added a can of fat-free cream of mushroom soup, diced tomatoes and a jar of mushroom slices I found. (I suggest adding fresh mushrooms though, if you have the option). I also had a bag of Uncle Ben’s 90-Second Brown Rice, which I cooked in the microwave and then added to the pan. (I didn’t have it but I highly suggest adding fresh spinach to the mixture.) I let it all simmer together for just ten minutes, since Kyle was starving, then tossed it in a bowl and added some parmesan cheese. Viola! It was great! Hope you enjoy!
