You know we love pasta in our house but I am constantly looking for new recipes or way to spice up classics so that we aren’t eating the same things all the time! I decided to change up classic mac and cheese to tailor to what each of us wanted. For mine, I wanted broccoli for something a little healthier. Kyle wanted a buffalo Mac and cheese because he loves spice! Brexton, being the typical 7 year old boy, wanted hot dogs in his!

Here’s the recipe for the mac and cheese:

1. On the stove in a saucepan, melt 1 stick butter

2. Whisk in 1/2 cup flour.

3. Slowly add in 4 cups whole milk.

4. Bring to a boil and add salt and pepper to taste.

5. Get out 3 oven safe dishes.

6. Add cooked noodles to each oven safe dish

7. Top with rue.

8. Top with 1-2 cups of cheese depending on preference.

Here’s how I tailored each recipe:

For Kyle’s, I drizzled buffalo sauce and ranch dressing on top and mixed the whole thing together! For mine, I added one cup of cooked broccoli and mixed it together. For Brexton’s, I cut up hot dogs and mixed them together.

9. In a small skillet, melt 1/2 stick up butter.

10. Once melted, add in 1 cup panko bread crumbs and stir till browned.

11. Top with bread crumb mixture.

12. Bake at 325 for 15-20 minutes.

Ingredients:

1 1/12 cup butter

1/2 cup flour

4 cups whole milk

At least 4-6 cups cheddar cheese

1 box cooked rotini noodles

1 cup panko breadcrumbs

Salt and pepper to taste

For the spin off ingredients, you’ll need 1 cup cooked broccoli for mine, buffalo and ranch sauce for Kyle’s, and 2 cooked hot dogs chopped for Brexton’s. This recipe is super quick and easy. I love how you can tailor it to any palate and everyone in your household can have an individual meal just for them. Some other options we thought about were buffalo chicken, spinach and artichoke, cheeseburger, pizza Mac and cheese! The options are endless. What would you put in yours?
