Anyone who knows Kyle and Brexton knows they love pickles. Brexton is absolutely obsessed with pickles! He has made pickle popsicles, pickle pizza, and could live on pickle chips if I let him. He also drinks pickle juice! I wanted to find a way to give them what they love and include some extra protein.
Here’s what you’ll need:
1 rotisserie chicken deboned and shredded
1 package cream cheese, softened
1/4 cup pickle juice
1 cup mayo
1 cup chopped baby dill pickles
1/4 cup green onions chopped
1 tbsp pickle seasoning
1. Add softened cream cheese to a bowl.
2. Add shredded chicken and stir with cream cheese to combine.
3. Add pickle juice, mayo, green onions, and pickle seasoning.
4. Stir to combine.
We like to serve this on toasted bread or in a tortilla, but it is amazing with crackers or in a lettuce wrap! The best part of this recipe is it’s so easy to take on the go or pack for lunches! I’ll admit they were both a little skeptical at first, but Kyle ended up eating two sandwiches at the track!
