Fall is here- and what is better on a cool, autumn day than pumpkin and chocolate? Today I am going to share a super easy recipe to satisfy those dessert cravings while keeping it healthy. This pumpkin mug cake is a great way to indulge your sweet tooth while still sneaking in some extra protein! It combines all of your favorite fall flavors like pumpkin, chocolate, cinnamon, and maple as well as protein and collagen from Ancient Nutrition!
I love that this is a single serving dessert- because let’s be real, if you made any more you would be tempted to eat it all! It is super easy to make and only takes 60 seconds in the microwave! A great way to curb those PSL cravings after a long day. 

INGREDIENTS

  • 2 tbsp chickpea flour
  • 1/8 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1 egg white or 2 tbsp liquid egg whites
  • 1 tbsp maple syrup
  • 1 tbsp pumpkin puree
  • 1 scoop vanilla Ancient Nutrition collagen protein powder
  • optional: mini dark chocolate chips

Chocolate Frosting

  • 1 tbsp pumpkin puree
  • 1 scoop chocolate Ancient Nutrition collagen protein powder
  • 1 tsp maple syrup

INSTRUCTIONS

Combine all ingredients into a microwave safe mug

Microwave for 60 seconds. Mug will be hot, so let it sit for a minute once done

For the chocolate frosting, combine all ingredients. Stir well

Top mug cake with chocolate frosting.


You could totally add in some nuts or some white chocolate chips to change up the recipe as well, but I think it is great just how it is!
