Here’s another quick and easy dinner that will leave your family full and smiling! It’s seriously one of the easiest meals I make when I am in a pinch for dinner. The best part is… there is basically no measuring required! This is a great seafood dish to add to your Italian dinner list.

What you’ll need:

1 stick of butter

4 cloves garlic

Red pepper flakes

1 box linguini pasta

1 bag frozen shrimp- peeled, tail off, and deveined.

1 bag baby spinach

1 lemon, juiced

1/2 cup parmesan cheese

Optional: sun dried tomatoes

How to make:

1. In a pan, melt 1/2 stick of butter and add 4 cloves of garlic finely chopped and red pepper flakes.

2. Add frozen shrimp and stir to coat with sauce.

3. Add 1 bag of baby spinach and stir to coat. Cook until soft.

4. Add another 1/2 stick of butter and 1 box of cooked linguine.

5. Add the juice from 1 lemon and 1/2 cup of grated Parmesan cheese.

6. Stir well to coat pasta and mix ingredients.

For an added depth of flavor, add some bagged sun dried tomatoes. They are my personal favorite! This dish is a great one pan dinner option that is a staple in our house. It’s a light, refreshing summer pasta dish that your family is sure to love!
